Spinach Rice (Gluten Free)

I like to use this to incorporate spinach creatively in meals. It also gives the same boring old plain rice a new twist. This can be served by itself, with a curry, a tofu dish, or anything your imagination comes up with! Have fun getting creative with this.

2 cups brown long grain rice, washed (basmati or jasmine are good)

1 Tbsp coconut oil

1/2 tsp cumin seed

1 tsp curry powder

1 cup onion, finely diced

2 cloves garlic, minced

1 tsp fresh ginger, grated

2 Tbsp fresh mint leaves, finely chopped

2 Tbsp cilantro, finely chopped

2 cups spinach, finely chopped

3/4 cup coconut milk

3 cups water

1 1/2 tsp sea salt or to taste

Heat oil in a medium sized saucepan, then add cumin seeds. Cook until seeds start splattering. Add curry powder, cook for one minute while stirring constantly. Then add onions, and cook til translucent. Next, add garlic, ginger, cilantro, mint, and spinach then cook for 4 minutes. Add rice, and stir to blend in flavors for a minute. Then, add coconut milk, water, and salt. Bring to boil, then reduce heat to simmer until rice is tender. If you want your rice softer, add more water. Fluff with fork and serve.

    Michelle,for someone that cannot have anything with coconut milk what would you suggest could be used in its place?
