Spinach rice is a flavorful rice dish that I like to make so I can incorporate lots of spinach in the dish in a creative way. It also gives the same plain rice a new twist.This dish is perfect for a large crowd or for picky eaters. I prefer to use brown basmati or jasmine rice for this dish.This can be served by itself, with a curry, a tofu dish, or anything your imagination comes up with! Have fun getting creative with this.
- 2 cups Brown Rice
- 4 cups spinach leaves
- 2 tablespoon cilantro, chopped
- 2 tablespoon fresh mint leaves, chopped
- 1 tablespoon Coconut Oil
- 1/2 teaspoon Cumin Seed
- 1 teaspoon Curry Powder
- 1 cup onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 3/4 cup Coconut Milk
- 3 cups water
- 1 1/2 teaspoons Sea Salt or to taste
Wash and drain brown rice using a colander, set aside. In a food processor process spinach, mint and cilantro. Heat oil in a medium sized saucepan, then add cumin seeds. Cook until seeds start splattering. Add curry powder, cook for one minute while stirring constantly. Then add onions, and cook til translucent. Next, add garlic, ginger, vegetable mixture cook for 4 minutes. Stir in rice, and mix to coat. Add coconut milk, water, and salt. Bring to boil, then reduce heat to simmer until rice is tender. If you want your rice softer, add more water. Fluff with fork and serve.
