
Mamma mia, delicious avocados make a great presentation, but they are so easy to make. Avocados are rich in vitamins and minerals such as potassium, Vitamin C and folate. They contain healthy unsaturated fats and are cholesterol free, heart healthy, and sugar free. They may be substituted for mayonnaise, butter and sour cream in your recipes. Replace eggs in your baked goods, such as cookies, pancakes, muffins, and breads. Use 1/4 cup avocado puree to replace one egg and don't worry about your baked goods turning green when baked, they will have a lovely golden appearance.
2 medium avocados
1 small cucumber diced
1/2 cup grape tomatoes, halved
2 tablespoons red onion, minced
1 clove garlic, minced
1 teaspoon lemon juice
2 teaspoons cilantro chopped
sea salt to taste
Slice ripe avocados lengthwise around the seeds, separate halves and discard pits. Using a spoon scoop out the flesh of one of the halves. Set aside the remaining three halves. Chop the half avocado and place in a bowl, add cucumber, grape tomatoes, red onion, garlic. Stir in lemon juice, sea salt and cilantro; spoon into avocados and arrange onto serving platters, enjoy.
