4 large potatoes
1 cup cashews
2 Tbsp nutritional yeast flakes
¼ cup red bell pepper
1 tsp sea salt
1 tsp granulated onion
½ tsp garlic powder
Preheat oven to 400 degrees F. Scrub potatoes, prick with fork and bake for 1 hour. Remove potato potatoes from oven, and cut in half lengthwise. Scoop out potato and mash with cheese sauce. Return to oven and bake for 10 minutes. Serve with salsa, avocado, and sour cream.
