
This is a mashup of recipes I made into a Veggie Fajita. These recipes can also be used alone to complete any meal. This delicious fajita recipe uses soycurls instead of chicken. Soycurls are tasty, gluten free meat alternatives (the healthiest as well), made using whole Non-GMO soybeans; unlike many of the ‘fake meats’ found in stores which contain soy protein isolates and wheat gluten. Soy curls texture is similar to chicken, therefore making it also the best substitute. I also include a fajita seasoning mix recipe, which has none of the dangerous additives found in commercial brands. Lastly, there is a whole wheat tortilla recipe that tastes better than supermarket brand and is way less expensive to prepare.
Soycurls

Soaked

2 cups soy curls
2 cups hot water
Seasoning Mix
1 tsp onion powder
1 tsp cumin
1 tsp garlic powder
½ tsp paprika
2 tsp oregano
1 tsp nutritional yeast flakes (optional)
¼ tsp cayenne paper (optional)
Fajita
¼ red bell pepper, cut in strips
¼ yellow bell pepper, cut in strips
¼ orange bell pepper, cut in strips
¼ medium-sized onion, sliced
2 tsp olive oil
Guacamole
Sour Cream
Salsa
6 Whole Wheat Tortillas (recipe below)
Preheat oven at 400 degrees F. Soak soycurls in a bowl with hot water to rehydrate. Drain water and add seasoning mix. Place on a greased baking sheet and bake for 30 minutes turning the soycurls over halfway. In a skillet sauté onions and peppers in olive oil, until vegetables are tender. Place soycurls and sautéed veggies in whole wheat tortillas, topped with guacamole, salsa and sour cream.
Whole Wheat Tortilla
2 cups whole wheat pastry flour
1 tsp baking powder
½ cup warm water
1 Tbsp olive oil
½ tsp salt
Sift flour, baking powder and salt in a bowl. Add olive oil and water to form soft dough, adding more water if necessary. Turn onto a floured surface and knead and knead well. Return dough to the bowl , cover and allow to rest for 30 minutes. Divide into 8-10 balls, roll out balls on flour surface into a circle. Cook in ungreased skillet on medium high heat. on one side until lightly brown spots are formed (about 30 seconds) then turn and cook on the next side. Place cooked tortillas on a plate covered with a kitchen towel to keep them warm and from drying out.
