I have been looking for my ice cream maker, and I finally found it right in time for National Ice Cream Month! I had some cherries on hand, and decided to try make ice cream. I love the results: A strong coconut, then cherry, and undertones of almond. The coconut milk makes this very creamy with no hint of iciness, and best of all: it’s good for you! This is probably one of the fastest gourmet ice cream recipes out there.
2 cups coconut milk( I used 1 can full fat coconut milk)
3/4 cup cherries (to blend)
3/4 cup cherries (chopped)
1/4 cup turbinado sugar
2 tsp almond extract
pinch of sea salt (opt.)
Place the cherries to blend, coconut milk, sugar, almond extract, and salt in your blender, and blend. Stir in the remaining cherries, and place into ice cream make. Follow your ice cream maker’s instructions to freeze. Enjoy :)
