I cook with a lot of rice. Of course, everyone starts getting a tad tired of it. I had a head of cauliflower and was wondering what to do with it when I got this idea. When I used to eat a full raw diet, I used this in place of rice. I decided to dress it up even more and make fried rice. This is really light and quick, a great quick meal. Also think of all those nutrients!

1 head of cauliflower, washed and trimmed
1 cup onion, minced
2 cloves of garlic, minced
1 tsp ginger
1/2 cup carrots, chopped
1/2 cup broccoli
1/4 cup green peas
3 Tbsp soy sauce or to taste
1 tsp sesame oil
1-2 Tbsp grapeseed oil or water

Chop cauliflower and process in food processor until it resembles rice. Set aside. Lightly steam broccoli, set aside. In a large skillet, heat oil on medium-high heat. Saute onions until translucent, then add garlic and ginger. Saute another minute. Add carrots and stir for another 2-3 minutes. Stir in cauliflower, cover skillet and cook for 10 minutes. Add broccoli, green peas, soy sauce, and sesame oil. Cover skillet, remove from heat.
