Baked Tater Tots (Vegan)

Making your own tater tots is very easy. I have been avoiding eating the frozen ones found in the grocery stores, because of their questionable ingredients, and they are usually deep fried. Tater tots are cute little cylindrical, pillowy, and crispy potato treats made from shredded potatoes that are generally deep fried. After searching the internet and seeing the different methods, I decided to have a go at it. It is one of the easiest recipes to make, and the results are very delicious. My son Daevyd wanted to eat the entire batch, and I said to him we have to leave some for his dad. He responded, “What about two, Mommy? Actually let’s cut them in half”.

There are two methods I found, one was boiling the potato, and the second was baking the potato. I chose the former method, because I didn’t have the time. Surprise, surprise! The batter held nicely together, I don’t know if its because I used the waxy red skin potato why I didn’t need to add any binding starches like arrowroot or tapioca starch. Anyways, I will definitely make these again, plus I can’t wait for the other recipes that I will create using it as a base. So excited that another cookbook is on its way!

Ingredients:

  • 3 medium potatoes (I used red potatoes)
  • 1 tablespoon, finely minced onion
  • 2 teaspoon nutritional yeast flakes (optional)
  • 1/2 teaspoon sea salt
  • Pinch cayenne pepper
  • 1 tablespoon coconut oil (melted)

Directions:

Scrub potatoes and cook in boiling water until tender, about 20 minutes. When still warm, allowing to cool enough so you can handle, remove peel and discard. Using a box grater, finely grate potato and place in a large bowl. Gently stir in minced onion, yeast flakes, sea salt and cayenne pepper. Preheat oven 425 F.Take a small amount, about a teaspoon and form into a cylindrical shape or a ball and place on prepared baking sheet. Brush with coconut oil. Bake for 30 minutes turning halfway. Delicious served with ketchup!
