Chickpea Curry with Quinoa

This quick and easy chickpea curry with quinoa will be on your table and ready to eat in less than 30 minutes. Also, the quinoa is ready in 15-20 minutes. This is a winner recipe with great flavors!

Chickpea Curry with Quinoa

On days that I’m busy, I love to make this delicious dish that usually takes me around 30 minutes to prepare.

Chickpeas are healthy for you as they contain lots of protein, fiber, and manganese along with antioxidants that help with weight loss and reduce the risk of cardiovascular disease. I like to use turmeric because of its health benefits also.

Studies have shown that turmeric has anti-inflammatory properties a natural painkiller, slows the progression of cancer, aids in weight management and great healing properties. Cardamom, coriander, and cumin detoxify the body, aids in digestion.

Ingredients

  • 2 tablespoons coconut oil
  • 1/2 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon turmeric
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1/4 teaspoon cardamom
  • 1 tomato chopped
  • 2 carrots cut diagonally
  • 1-1/2 cups cooked chickpeas (garbanzo beans) or 1 can chickpeas
  • 1 cup water or liquid from chickpeas
  • 1 cup coconut milk
  • 3/4 teaspoon sea salt or to taste
  • 1/4 cup cilantro leaves, roughly chopped extra for garnish
  • 1 cup dry quinoa
  • 2 cups water

Direction

For Curry Chickpeas: Heat saucepan on medium-high heat with oil. Add onion and saute until soft, about  3 minutes. Stir in garlic, ginger, turmeric, coriander and cardamom and cook for 1 minute. Stir in tomatoes,  carrots, and chickpeas. Add water and coconut milk. Bring to a boil, cover saucepan with a lid and reduce to simmer for 10 – 15 minutes or until desired thickness is reached. Add salt to taste and stir in cilantro. To serve place on top of cooked quinoa and garnish with cilantro leaves.

For Quinoa: Rinse quinoa using a fine mesh strainer. Add quinoa to water in a medium pot on medium-high. Bring to a boil, reduce heat and cover then let simmer for approximately 15 minutes

Chickpea Curry with Quinoa

Recipe Notes: This dish is delicious served with brown rice or other whole grains. Also, you can add 1/4 teaspoon cayenne pepper if you like it spicy!
