Vegan Macaroni Cheese

This recipe reminds me of my mom’s macaroni and cheese, that I grew up on.

Cheesy – Combination of nutritional yeast or noni juice and coconut milk give this macaroni cheese a cheesy flavor.

Velvety- Cashews and coconut milk makes it velvety.

Creamy- Cashews and coconut milk shine here.

Buttery- Coconut milk helps to give a buttery flavor.

Vegan Macaroni Salad

Noni Juice can be used in place of nutritional yeast if is not readily available.


  • 1 cup cashew
  • 1/4 cup nutritional yeast flakes or Noni Juice
  • 1/2 cup water
  • 2 tablespoons coconut milk
  • 1/2 red bell pepper
  • 2 tablespoons chopped onion
  • 1 clove garlic
  • 1 1/2 teaspoon sea salt
  • 1 tablespoon lemon juice
  • 1-8 ounce box of Elbow Pasta
  • Parsley Flakes for Garnish
  • Ground Paprika for Garnish


.Preheat oven 350 degrees F.

.Cook elbow pasta according to package directions in boiling water and drain, set aside.

.In a blender process the sauce recipe until smooth.

.Add sauce to pasta and stir to combine.

.Garnish with parsley flakes and ground paprika.

.Bake for about 15 minutes.

  1. Thank you again Michelle. I don’t own a high speed blender. Therefore, with your proportions and doubling the recipe, I had to add much more water. It was initially really thick. I probably should have left the Noni at only a 1/4 cup even though I doubled the recipe. It was very purple😀 and I should have also used less salt. I believe the Kalahari salt I used has more salt per gram, which made it taste a bit salty at first. The overall taste was delicious and much better than nutritional yeast.

    I’m not normally a fan Of using nuts in cooking due to some family members having nut allergies. I haven’t found an amazing alternative yet. I make sauce with sweet potato puree. However it isn’t very thick. I’d like to try this recipe. I have noni powder….can I still use 1/4cup?

  10. I’m really surprised it turned out that good using noni juice. My dad tried that in his battle against cancer and I remember it tasting rather sour and horrible. I am kind of intrigued now, but I’m a bit hesitant to make the investment as it is rather pricy and hard to come by over here :D

    But great that you figured out a substitute!

  13. Yes, you can omit it altogether or try my potato cheese recipe or regular cashew cheese recipe that I have on here. The reason I omitted the nutritional yeast flakes is because I have viewers who were requesting that I make a cheese sauce without it.

      I just make my vegan cashew sauce without the nutritional yeast and it tastes just as good to us. I try to keep things cheap as possible without sacrificing good taste or health for a nicely balanced meal at meal times.

  14. Made this for supper with rice noodle macaroni and it was very delicious. Combined the sauce with leftover pizza sauce, veggie ground beef, mushrooms and olives to make it into a pizza macaroni casserole. During the last 10 minutes of cooking I topped it with Daiya mozarella and covered with foil to melt. Really good! We all couldn`t help but have seconds.
