Today I decided to make a potato dish; we harvested an abundance of potatoes, beans and onions from our organic garden.
My children love when I make a cheese sauce with potatoes. Oh this dish turned out very delicious!
Cheesy Potato Bean Casserole
8 cups potatoes sliced and cooked
1 onion sliced
1 cup green beans cut diagonally
1/4 tsp salt
Vegan Cheese Sauce
1 cup cashew or almond (I used cashew)
1/2 red bell pepper
1/4 cup water
1 tsp onion powder
1 tsp garlic powder
1/4 cup nutritional yeast flakes
1 tsp salt
Cook sliced potatoes in boiling water with salt until tender along with green beans. Place potatoes, green beans and sliced onions in a bowl. Blend cashew, bell pepper, water, onion powder, garlic powder, nutritional yeast flakes and salt until smooth.
Combine ingredients and place in a 9 x 13 baking pan and bake on 350 for 30 minutes.
