These flavorful and colorful Maple Glazed Carrots  are wonderful to compliment your meals. The combination of cardamom and thyme with maple syrup give a sweet and robust taste.

Maple Roasted Carrots (Vegan)



  • 1 pound carrots, peeled
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • pinch cardamom
  • 2 sprigs thyme (use leaves only, discard stalk)
  • 1/2 teaspoon sea salt



Preheat oven to 400 degrees F. Line a baking tray with parchment paper. Wash and peel carrots, then cut in half lengthwise. In a bowl combine carrots, olive oil, maple syrup, cardamom, thyme, and salt. Place carrots on a baking tray on a single layer and bake for 30-45 minutes, turning every 10 minutes or until carrots are tender and caramelized. Remove and enjoy!
