These easy Gluten-Free Vegan Strawberry Oat Bars are healthy and addictive, made from scratch with fresh ingredients, with an oatmeal base, strawberry filling topped with a homemade crumb topping.

My husband has been requesting granola lately but I wanted to be a little more creative since I have been making granola for years and wanted a little more challenge.
I love crumbles, granola, cobblers so I had no doubt I would fall in love with these Strawberry Oat Bars as well.
I used gluten-free rolled oats, almond meal, brown rice flour topped with a layer of homemade strawberry jam sweetened using coconut palm sugar.
They were so delicious, they were all gone in no time.
How Gluten-Free Vegan Strawberry Oat Bar?
- To make the jam, bring strawberries, coconut sugar, and lemon juice in a medium saucepan over medium heat. Bring to a boil and reduce heat to simmer until sauce is thick around 20 minutes. Remove from heat and allow to cool.
- Preheat oven 375°F. Line an 8×8 baking dish with parchment paper and spray with cooking oil. Set aside.
- In a large bowl, add oats, oat flour, almond meal, flaxseeds, baking powder, and salt. In a smaller bowl, combine maple syrup, coconut oil, and vanilla.
- Stir in the liquid mixture, into the dry ingredients until fully combined.
- Set aside 1/3 of the base and press the remaining 2/3 in the base of the prepared pan.
- Sprinkle the remaining oat mixture on top. Bake for 30 minutes or until the top is golden brown. Remove from oven and allow to cool before cutting into bars.

Tips For Making Gluten-Free Vegan Strawberry Oat Bars
1. Substitute my homemade strawberry jam recipe with store-bought jam.
2. Also, you can substitute the sweeteners with your own favorite.
3. Adjust the coconut oil in the recipe if you substitute dry sweetener.

Notes

These oat bars were delicious! My husband and I both loved them and they are so easy to make! I had a lot of ripe strawberries so I also made your banana and strawberry bread and it was to die for. I’ve baked it several times already, it has become a favorite at home. Thank you Michelle for sharing all your amazing recipes. I’ve recently start a vegan gluten free diet and it has been a challenge, specially for baking. After dozens of fails following other recipes out there, everything I’ve tried so far from your blog was successful, delicious and straightforward. You have a fan for life here!
Laura, you made my day, thank you very much for your feedback, I’m so happy for your success when you try my recipes. Blessings to you and your family.
These are delicious! My 10 year old said he’d eat the whole batch if he could lol. I spent about an hour or more in your site today and pinned and printed SO many recipes I want to try. You have done an amazing job here. I love the Jamaican recipes especially, and the fact that you’ve blended your heritage with vegan cooking and healthy eating. I later realized I have been to your site last year as well for the cornmeal porridge ( which my kids love ) but I didn’t realize all the other gems on your site. Can’t wait to try more- thank you!!
Asha, your comment made my day thank you. I’m so happy your 10-year old enjoyed my oat bars. Thank you for trying my recipes and leaving this encouraging feedback.
I NEVER leave comments and I as a “know-it-all” baker (hahaha), I never follow recipes to the T. However, something told me to stick to your recipe and man! This is wonderful!! I will be replacing our daily Kids’ Clifbar habit with this. Thank you so much! I’ll definitely be trying more of your recipes (and actually following them ;-)
Ashley, thank you for your feedback and I’m super happy you followed your mind, lol I’m so happy you love it and that’s an honor that you decide to replace Clifbar for my recipe for your child.
Ohhh, Michelle. These were so good. I used homemade raspberry jam since I’m allergic to strawberry (pretty much made just like your jam directions). I am so happy I found your site. Can’t wait to try your chickpea stew next. Thanks for the great recipes!
You are welcome Jem, so happy you enjoyed them. Thank you for your feedback, I hope you enjoy my chickpea stew recipe.
Have yet to try it, but I have just moved from being vegetarian to now being vegan, and cannot wait to try all of these vegan recipes. This one in particular makes my mouth water, and I will for sure try this sometime this week, you rock!!
