After making my classic Vegan Mac And Cheese and my Instant Pot Chili Mac And Cheese recipe, I couldn't stop there. I decided to bring you a healthy version of macaroni and cheese with sweet potato for the fall.

Sweet Potato is rich in nutrients so it helps to boost the nutritional value of the macaroni and cheese and adds a pretty orange color to the dish. It is a great way to add vegetables to your kid's meals.

Vegan sweet potato mac and cheese comes together so easily. I used gluten-free brown rice pasta but you can use your favorite pasta and follow the directions on the package to cook it.

How To Make Sweet Potato Vegan Mac And Cheese

  1. To make sweet potato mac and cheese, peel, cut sweet potato in chunks and boil them until fork tender. Boil pasta according to package directions in a large pot until al dente, drain and return to the pot.
  2. Drain sweet potato chunks, add to a high-speed blender with almond milk, cashews, yeast flakes, garlic, onion powder, tahini, lemon juice, and salt. Process until smooth and creamy. Set aside.
  3. Pour cheese sauce over pasta and stir until fully coated. If needed you can heat pasta while stirring.

    This tastes so good Michelle! I do not know how you do it, but every recipe is a HIT. You never cease to amaze me! My husband devoured batch one! I am working on another batch now!

    I just tried this recipe and it tastes wonderful I like the creamy texture of the cheese. It would also make a good nacho cheese sauce. I added a little bit of olive oil while blending and it came out good. I also used soymilk as the dairy free milk. Wonderful recipe. Thank you

    This sound great! First mac and “cheese” I’ve seen with sweet potato. I will make thsi in the very near future. Probably add some roasted brussel sprouts to it.
