Spicy Potato Curry Vegan

I had to share this spicy vegan potato curry recipe because I recently made it for a large crowd and it was finished in no time. The host requested that I make it again for the next event. I love curries and growing up in Jamaica, we ate curries a whole lot (curry chicken, curry goat were popular!. This curry is creamy and delicious, it’s very hearty with potatoes, carrots, chickpeas and green peas. This recipe is suitable for large crowds, it’s easy to make and great for even the strictest meat eater.

  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 teaspoons turmeric
  • 1 ½ teaspoons cumin
  • 1 teaspoon coriander
  • 1 teaspoon thyme leaves
  • 1 tomato, chopped
  • 4 white potato, chopped
  • 1 carrot, diced
  • 1 ½ cups cooked or 1-15 ounce can of chickpeas
  • 1-15 ounce can/ 400ml coconut milk
  • 1 cup water
  • ½ cup frozen green peas
  • 1 teaspoon sea salt
  • ½ teaspoon cayenne pepper


Heat oil in a large saucepan, add onion and saute until soft, about 4 minutes. Add garlic and ginger stirring for 1 minute. Add turmeric, cumin, coriander, thyme and cook until fragrant, stirring constantly. Add tomato, potato, carrots, chickpeas, coconut milk, water. Cover saucepan and bring to boil. Reduce to a simmer and cook for 30 minutes until thickened (I also mash some of the potatoes). Stir in peas, salt and pepper. Remove from heat. Delicious served with salad, brown rice, quinoa or gluten-free tortilla.

    I love the recipe, it was filling and flavorful! My son liked it but commented it was too spicy, any suggestions to cut back on the spice?

      Hello Casssandra, so happy you found the recipe flavorful and filling. To cut back on the spicy taste, omit cayenne pepper and ginger.

  3. I made this about an hour ago. I’ve never ever commented on any recipe before but felt I had to with this. I find a lot of recipes always lack something but this is so tasty and honestly nicest curry I’ve made. Thank you.

  4. Thanks for the recipe! I made some substitutions because I was out of some of the ingredients, but it still came out great. I substituted broccoli florets for the potatoes and one 15 oz can of tomato sauce instead of fresh tomato. Next time I will increase the Cayenne pepper a bit to suit my families heat level. Very tasty, my family really enjoyed it!

      Samanda, yes you can just use plain water or some unsweetened cashew or almond milk will work fine!

    This was really good with some white rice. My kids went back for seconds. Will definitely make this again!

    This is defiantly not spicy… However it was still delicious and I will be making it again. I may just add a chili pepper next time early on with the garlic.

  11. Cold, damp spring day here and this is bubbling away on the stove. I’ve never made my own curry before (usually cheat and use a jar of sauce). It wasn’t that labour intensive. Can’t wait to try it.

  12. I made this dish today, I went to a speciality spice store bought great quality spices and this dish really kicked . However ran out of potatoes so I had to use a yellow sweet potato with 2 white potatoes.
