Celery Root White Bean Stew

– 1 tablespoon avocado oil – 1 medium onion, chopped – 3 cloves garlic, minced – 1 medium celery root, peeled and chopped – Potato, scrubbed and chopped – Cooked white beans, (navy, white kidney beans, Great Northern) – 3 cups vegetable broth – 2 sprigs thyme – 1 teaspoon salt, or to taste


1. In a large saucepan, add avocado oil and place it on medium heat.

2. Once the oil heats up, add chopped onion and cook for 2 to 3 minutes until they turn translucent.

3. Add minced garlic and thyme sprig and let it cook until they are fragrant.

4. Add celery root, diced potatoes, and cooked white beans. Mix well, so everything is well combined.

5. Pour in vegetable broth and bring the mixture to a boil.

6. Reduce the heat and let it simmer for about 25 minutes or until everything is cooked through. Season with salt and serve.
