Famous Vada Pav RECIPE

For the batter: – 1 cup of chana dal (split chickpeas) – 2-3 green chilies, chopped – 1 inch piece of ginger, chopped – 2 cloves of garlic, chopped – Salt, to taste – Water, as needed

For assembling: – 8 pavs (small Indian bread rolls) – 1/2 cup of dry garlic chutney powder – 1/2 cup of tamarind chutney – Chopped onion and coriander leaves, for garnish – Powdered red chili, for serving

STEP 1

Soak chana dal in water for 2-3 hours. Drain and grind to a coarse batter with green chilies, ginger, garlic, and salt.

Heat oil in a deep pan for frying.

Take a spoonful of batter and shape it into a ball, then flatten it slightly to make a vada.

Gently slide the vada into the hot oil and deep fry until golden brown, about 2-3 minutes. Repeat with the remaining batter to make 8 vadas.

Toast the pavs in a dry pan until lightly golden.

Apply garlic chutney powder on one side of each pav.

Place a hot vada in between two pavs, garnish with chopped onion and coriander leaves, and serve with a sprinkle of red chili powder. Enjoy!
