Jamaican Callaloo: healthy, leafy vegetable dish with onion, garlic, tomatoes, thyme, and Scotch bonnet pepper.

What is Jamaican Callaloo?

Ingredients:-

– Callaloo (chopped and tightly packed) – olive oil or coconut oil – onion (chopped) – garlic (minced) – green onions (chopped) – thyme (2 sprigs) – tomato (medium, chopped) – salt (to taste) – Scotch Bonnet pepper (whole) or cayenne pepper (1/4 teaspoon) – water (2 tablespoons)

Prep Callaloo

Prep callaloo by peeling outer membrane, removing old leaves, and chopping.

Saute Aromatics

Saute onion, garlic, spring onion, thyme, tomato, and scotch bonnet pepper in oil.

Add Callaloo 

Simmer covered for 20 minutes.

Add spinach serve

Add spinach and cook for 5 minutes, then serve.
