Popular Jamaican side dish: Pigeon Peas and Rice made with Gungo peas and seasoned coconut milk.

Ingredients:-

– Rice (Jasmine brown rice) – Coconut milk – Water (2 1/2 cups) – Pigeon peas – Onion (small, chopped) – Green onions (chopped) – Garlic (3 cloves, minced) – Ginger  – Allspice (1/4 teaspoon) – Thyme (2 sprigs) – Salt  – Scotch Bonnet pepper

Boil mixture

Wash rice and set aside.

Add ingredients to a pot and bring to a boil.

Simmer

Add rice and simmer for 40-45 minutes.

Fluff & serve.
