Vegan Brown Stew Chicken Recipe

Vegan version of Jamaican brown stew chicken is delicious, healthy, and retains traditional flavors.

– Extra-firm tofu, pressed and cut into cubes – Browning, for marinade and cooking – Pink Himalayan salt, divided – Ground paprika – Black pepper – Coconut oil – Garlic, minced – Onion, chopped – Thyme, sprigs – Bell pepper, sliced – Carrot, chopped – Potato, peeled and diced – Vegetable broth – Organic ketchup – Salt, to taste

Prepare Tofu

Press and dice tofu, coat with marinade, and cook in skillet until brown.


Sauté Vegetables

Sauté onion, garlic, thyme, bell pepper, carrot, and potato in the same skillet.


Simmer Mixture

Add vegetable stock, ketchup, and browning to the skillet and let simmer for 10 minutes.


Add Tofu

Add cooked tofu, simmer for 5 more minutes, and serve hot.
