Vegan Jamaican Curried Tripe and Beans Recipe

Vegan and gluten-free Jamaican Curry Tripe and Beans recipe made with tofu skin and butter beans.

– Dried tofu skins (1 package) – Coconut oil or olive oil  – Onion  – Garlic (3 cloves, minced) – Ginger  – Spring onions (2, chopped) – Thyme  – Curry powder  – Tomato (1 medium, chopped) – Carrots (2, chopped) – Butter beans  – Coconut milk (1 can) – Water (1 cup)

Soak and cut

Soak and cut Saute onion skin into 1-inch pieces.

Saute onion and garlic, add ginger, spring onion, thyme, curry powder and tomatoes.

Add Veggies

 Add carrots, butter beans, soaked tofu, water, coconut milk, allspice, and pepper. Simmer for 25 minutes.

Add salt, check seasoning, and serve with rice and salad.
