Vegan Pumpkin French Toast

– 1 cup almond milk – 1/2 cup pumpkin puree – 1 tablespoon ground flaxseeds – 2 tablespoons cornstarch – 1 teaspoon cinnamon – Pinch of nutmeg or cardamom – 2 tablespoons maple syrup – 1 teaspoon vanilla – Oil for cooking – 12 slices of bread


1. Add almond milk, pumpkin purée, ground flaxseeds, cornstarch, cinnamon, nutmeg or cardamom, maple syrup, and vanilla to a rectangular baking dish and whisk to combine.

2. Heat skillet over medium heat.

3. Dip each slice in the mixture, flipping over to coat the other side.

3. Add coconut oil to coat the skillet.

4. Cook the French toast for about 2 or 3 minutes on each side.
