red onion

Place yuca in a large pot of cold water with salt and bring to boil.

STEP 1

Reduce heat, cover pot and simmer for 20 minutes or until yuca is fork tender.

STEP 2

Heat oil in a large skillet on medium high, add onion and saute until soft, about 2-3 minutes. 

STEP 3

Add garlic and cook for 30 seconds.

STEP 4

 Add lemon juice and salt and cook for a couple minutes. Pour over yuca and serve.
