Raspberry Banana Chia Pudding (Vegan)

This delicious raspberry banana chia pudding is very satisfying. Raspberry is one of my favorite fruits, as a matter of fact,  I love all fruits! During the summer months, I try to eat all the fresh fruits that I can get my hands on.

For this raspberry banana chia pudding, the star is the chia seeds. Chia seeds are tiny black chia seeds, which are native to South America. These little seeds can be a wonderful addition to your New Year’s weight loss plan. When added to liquid, they expand to about 27 times their size, and they also transform into a mucilaginous ball.

Chia seeds are high in fiber, protein, omega 3 fatty acids, manganese, magnesium, calcium, and phosphorus. When consumed they give you a feeling of satiety. They are low in calories, so they are beneficial to your weight loss plan. An easy way to enjoy chia seeds is to add them to non-dairy milk and soaking them over night, then add fruits the next day for breakfast. Please note: Because of the expandable nature of chia seeds, always soak before consuming and drink plenty of water to avoid blockage.

Yield: 1 serving 

Ingredients:

  • 1/4 cup (36g) chia seeds
  • 1 cup (240ml) almond milk
  • 1 teaspoon maple syrup or sweetener of choice (optional)
  • 1/4 cup fresh raspberries
  • 1 banana, sliced

Directions:

Pour chia seeds in a medium sized bowl. Add milk and soak for at least 4 hours, or preferably overnight. The following morning, add sweetener, raspberries and banana. Enjoy!

Chef’s Tip: You may also add nuts and/or seeds (almond, pecans, sunflower seeds, hemp seeds).
