Ingredients

Lemon Dressing

Bean Salad

  • 1/2 cup black olives slices
  • 1/2 cup red onion cut into thin slices
  • 1/2 medium red bell pepper cut into strips
  • 1 16-ounce can red kidney beans, rinsed and drained
  • 1 15-ounce can black beans, rinsed and drained
  • 1 15-ounce can chickpeas, rinsed and drained
  • 1 15-ounce can green beans, rinsed and drained

Instructions

  • Whisk together lemon juice, maple syrup, olive oil, and salt in a large bowl and set aside.
  • Add black olives, red onions, and bell pepper and stir.
  • Add kidney beans, black beans, chickpeas, and green beans. Stir well. Chill before serving
