Ingredients

  • 1 medium eggplant
  • 2 tablespoons avocado oil
  • 1/4 cup Bragg's liquid aminos or soy sauce
  • 2 tablespoons maple syrup
  • 1 teaspoon hickory liquid smoke
  • 1 teaspoon smoked paprika

Instructions

  • Preheat air fryer to 370º F for 5 minutes
  • Cut eggplant into thin strips lengthwise, about ⅛ inch thickness, using a mandolin for best result
  • Combine oil, Bragg's Liquid Aminos, maple syrup, liquid smoke, and smoked paprika in a bowl
  • Brush olive oil mixture on both sides of eggplant slices and place in a single layer on air fryer basket for 10 minutes
  • Flip eggplant and cook for another 3-5 minutes or until eggplant is crispy on the edges.
