For The Falafel

  • 1 15 ounce can chickpeas, drained and rinsed
  • 1/2 cup cilantro
  • 1/4 cup fresh parsley
  • 1/2 small onion
  • 3 cloves garlic
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon ground paprika
  • 1/4 teaspoon Cayenne pepper more for spicier flavor
  • 1/2 teaspoon salt

For The Salad

  • 2 cups lettuce chopped
  • 1/2 cup cherry tomatoes halved
  • 1 small cucumber cut into slices
  • 1/2 cup red onion cut into slices
  • 1/2 cup pitted black olives slices
  • Vegan Tzatziki Sauce

Instructions

To Prepare The Falafel

  • Line the air fryer basket with parchment paper, spray with cooking spray, or brush with cooking oil.
  • Add chickpeas to the food processor with cilantro, parsley, onion, garlic, cumin, coriander, paprika, cayenne pepper, salt, and pulse.
  • The mixture shouldn't be processed until smooth, still grainy, and able to stick together.
  • Scoop out tablespoon sizes of falafel mixture and roll in between the palms of your hands into balls.
  • Place in a single layer on the parchment paper-lined air fryer. Spray with cooking spray.
  • Bake at 350 for 15 minutes, turning halfway.
  • Repeat until the mixture is used up completely.

Assemble Falafel Bowl

  • To serve falafel salad, divide the lettuce into two bowls, arrange falafel, lettuce, tomato, cucumber, onion, olive on top. Drizzle with vegan tzatziki sauce and serve
