Preheat the air fryer to 375 degrees F. Cut each potato into half and then into quarters lengthwise. Cut each quarter into slices about 1/2 inch thick.
Place potatoes in a medium bowl, add cold water and let it sit for an hour to remove the excess starch.
Drain potatoes and dry them with a clean towel or paper towel.
Place in a medium bowl and toss with olive oil to coat. Add Italian seasoning, garlic powder, paprika, and salt to taste. Toss fries well to fully coat.
Lightly spray or brush the base of the air fryer basket with oil. Arrange potatoes in a single layer at the bottom of the basket.
Cook potatoes for 8 minutes, then turn and cook for 5 minutes or until fries are crisp and golden brown.
Serve immediately with your favorite dipping sauce.
