Add the artichoke hearts, chickpeas, lemon juice, tahini, garlic, cumin, Za'atar, and salt to a food processor.
Process until smooth, scraping down the sides of the bowl as needed.
With the food processor running, slowly drizzle olive oil until the hummus is smooth and creamy.
Taste and adjust seasonings as needed
Transfer the hummus to a serving bowl and smooth the top.
Drizzle with additional olive oil, if desired.
Serve with tortilla chips, veggies, or crackers. Enjoy!
