Artichoke Hummus

The smooth, healthy artichoke hummus is super creamy, full of flavors, and delicious. This is a great spin on traditional hummus; if you are an artichoke lover, you get to taste it in hummus. As someone who always looks for dipping recipes for vegetables, and crackers, I can never get bored preparing different hummus variations.

Ingredients

  • 1 1/2 cups cooked chickpeas or 1 (15-ounce) can of chickpeas
  • 1 cup artichoke hearts , drained
  • 1/4 cup raw tahini paste
  • 2 tablespoons lemon juice
  • 2 cloves garlic
  • 1/2 teaspoon cumin
  • 1/2 teaspoon Za'atar optional
  • 1/2 teaspoon salt or to taste
  • 2 tablespoon extra-virgin olive oil optional

Instructions

  • Add the artichoke hearts, chickpeas, lemon juice, tahini, garlic, cumin, Za'atar, and salt to a food processor.
  • Process until smooth, scraping down the sides of the bowl as needed.
  • With the food processor running, slowly drizzle olive oil until the hummus is smooth and creamy.
  • Taste and adjust seasonings as needed
  • Transfer the hummus to a serving bowl and smooth the top.
  • Drizzle with additional olive oil, if desired.
  • Serve with tortilla chips, veggies, or crackers. Enjoy!
