Avocado Mousse

Ingredients

  • 1 medium avocado peeled and pitted
  • 1/2 cup coconut cream
  • 3 tablespoons agave syrup or maple syrup
  • 1 banana
  • 1/4 cup lime juice
  • 1 lime zest
  • 1/2 teaspoon vanilla
  • Pinch of salt

Instructions

  • Cut the avocado lengthwise and separate the two halves. Remove and discard the avocado pit. Scoop out the flesh with a spoon, and transfer it to a food processor, or a bowl if you are using an immersion blender.
  • Add coconut cream, maple syrup, and banana, and process until smooth.
  • Add lime juice, lime zest, vanilla, and sea salt, and continue to process until fully combined.
  • Transfer the mousse to a bowl, and refrigerate until chilled, then serve.
