Ingredients

  • 2 ripe plantains
  • 1 tablespoon avocado oil
  • 1/4 teaspoon salt
  • 1 teaspoon fresh ginger grated
  • 1/2 teaspoon cinnamon powder
  • 1/4 teaspoon nutmeg optional
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cayenne powder
  • 1/2 cup Roasted peanuts to garnish

Instructions

  • Preheat the oven to 375.
  • Line the baking sheet with parchment paper, lightly spray or brush with oil.
  • Peel ripe plantains, cut them into bite-sized pieces.
  • Toss with oil, salt, cinnamon, ginger, garlic powder, onion powder, and cayenne pepper.
  • Place plantain on a baking sheet in a single layer.
  • Bake for 25-30 minutes until crispy., turning halfway
  • Serve platter, garnish with peanuts.
