Ingredients

  • 2 medium ripe plantains
  • cooking spray

Instructions

  • Preheat oven to 425℉. Lightly spray parchment lined cookie sheet and set aside.
  • Using a knife remove the peel of the plantain by cutting off the ends then cut through the skin lengthwise. Remove the skin and slice diagonally into 1/2 inch slices.
  • Place slices in a single layer on a cookie sheet, spray the top of plantains with cooking spray and bake for 20 minutes, turning halfway or until plantains are golden brown.

Instructions For Fried Plantains

  • Peel the plantains by cutting off the ends and slicing through the skin lengthwise. Remove the skin and slice the plantains diagonally into 1/2 inch slices.
  • Heat a skillet over medium-high heat and add enough oil to cover the bottom.
  • Once the oil is hot, add the plantain slices in a single layer. Fry for about 2-3 minutes on each side, or until golden brown and crispy.
  • Remove the plantains from the skillet and place them on a paper towel-lined plate to drain excess oil.
  • Serve hot as a snack or side dish.
