Ingredients

  • 1 pound beet greens chopped
  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1/4 cup bell pepper chopped
  • 2 sprigs of thyme or 1/2 teaspoon dried
  • 1 vegan bouillon cube
  • 2 tablespoons water
  • Scotch Bonnet pepper optional

Instructions

  • Heat oil in a large skillet over medium heat. Add onion; cook, stirring often, until onion is soft, about 2-3 minutes. Add garlic; cook and stir, about 1 minute.
  • Add bell pepper, thyme, bouillon cube, and water, and cook for another minute.
  • Stir in beet greens a few handfuls at a time until it starts to wilt. Cover and cook for about 10 minutes or until greens are tender.
