Wash the carrots and peel them. Remove the crown and dice in slices.
In a saucepan, add water and place it on medium heat.
Once the water starts boiling, add carrots and boil for about 5 minutes or until the carrots are tender.
Once the carrots are done, drain them and pass them through cold water to stop the cooking process.
Place the carrots back in the saucepan, and place the saucepan on the stove.
Add vegan butter, organic cane sugar, maple syrup, grated ginger, salt, and cinnamon.
Stir well so that the ingredients coat the carrots.
Cook the carrots for about 2 to 3 minutes until the glaze bubbles.
Turn off the heat and let them cool. The candied carrots are ready.
