Ingredients

  • 1 tablespoon avocado oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 green onions chopped
  • 2 sprigs fresh thyme
  • 2 large carrots scrubbed and diced
  • 2 stalks celery scrubbed and chopped
  • 1 vegan bouillon cube
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 4 cups water

Instructions

  • Start by heating oil in a large pot over medium-high heat, add onion and cook until soft, about 3 minutes.
  • Add garlic, green onion, thyme, carrot, celery, bouillon cube, onion powder, and garlic powder, and stir for about 2 minutes.
  • Add water, and bring to a boil. Reduce heat to simmer for 20 minutes.
