Ingredients

  • 1 head cauliflower washed and trimmed
  • 1 cup broccoli cut into bite sized pieces
  • 2 tablespoons sesame
  • 1 cup onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 medium carrot shredded or diced
  • 1/2 cup green peas or shelled edamame
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 3 tablespoons Bragg's liquid aminos or soy sauce
  • 1 green onion sliced

Instructions

  • Chop cauliflower into bite-size pieces and process in a food processor until it resembles rice. Set aside in a bowl.
  • In a large skillet, heat sesame oil or water on medium-high heat. Sauté onions until translucent, about 3 minutes, add garlic and ginger.
  • Sauté another minute. Add broccoli florets, carrots, and cook, stirring for another 2 minutes. Stir in cauliflower 'rice,' green peas, onion powder, garlic powder, soy sauce. Cover the skillet and cook for 3 minutes more or until the cauliflower is tender.
  • Remove from heat, stir in green onions. Serve immediately!
