Ingredients

For The Roasted Cauliflower

  • 1 medium cauliflower
  • 1 tablespoon avocado
  • salt to taste

For The Vegan Tikka Masala Sauce

  • 1 tablespoon coconut oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 teaspoon fresh ginger ginger
  • 2 teaspoon cumin
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon turmeric
  • 1/2 cup tomato sauce
  • 1/2 cup coconut milk
  • 1/2 cup water
  • 1/4 teaspoon Cayenne pepper
  • 1/2 teaspoon salt
  • cilantro for garnishing

Instructions

  • Preheat the oven to 425 degrees F and then line a baking sheet with parchment paper. Now toss the cauliflower florets with oil and salt in a large bowl.
  • Spread cauliflower florets on a baking sheet in a single layer and roast for 20 minutes or until golden brown.
  • Meanwhile, prepare the tikka masala sauce
  • Heat oil over medium-high heat in a saucepan, add onion, and cook until soft, about 2 minutes. Stir in garlic and ginger, cumin, cinnamon, cardamom, and turmeric, and cook until fragrant.
  • Add tomato sauce, coconut milk, water, cayenne, and salt to taste.
  • Stir in the roasted cauliflower florets
  • Garnish with cilantro and serve and that's it, your very own cauliflower tikka masala is ready to be devoured!
