Ingredients

  • 6 Yukon gold potatoes peeled and cut into thin strips
  • 2 tablespoons avocado oil
  • 1/2 teaspoon Himalayan pink salt
  • 1 tablespoon nutritional yeast flakes
  • 1/4 cup cilantro finely chopped
  • 3 cloves garlic minced

Instructions

  • Preheat the oven to 425℉. Prepare a baking sheet by lining it with parchment paper and lightly spraying or brushing with oil. Set aside.
  • Add potato strips with enough water to cover and soak for 30 minutes in a large bowl. This will remove excess starch from the potatoes and result in crispier fries.
  • Drain and rinse the fries, then dry them with a clean kitchen towel or paper towel.
  • Toss the fries with olive oil, sea salt, and nutritional yeast flakes.
  • Spread in a single layer on the prepared baking sheet. Bake for 35 minutes, flipping after 15 minutes, or bake until golden and crispy.
  • Remove fries from the oven and transfer them into a large bowl. Toss fries with cilantro and garlic.
