Cilantro Lime Quinoa

This easy Cilantro Lime Quinoa is a great low carb alternative, and it is so easy to prepare. It is light, fluffy, and delicious as a side dish or a base for burrito bowls.

  • 1 cup quinoa
  • 2 cups vegetable broth or water
  • 1 fresh lime juice and zest
  • 1/4 cup cilantro chopped
  • salt to taste

Instructions

  • Rinse dry quinoa using a finely meshed strainer. Place quinoa in a medium-sized pot with the vegetable broth.
  • Bring to boil, then simmer on low heat for 15-20 minutes, or until quinoa is tender and fluffy.
  • Stir in lime juice, zest season with salt to taste and serve.
