Cucumber Avocado Salad

This cucumber avocado salad is the perfect combination of crunchy and creamy,  the perfect cooling salad for hot summer days. Chunks of crunchy cucumbers, creamy avocado, bold red onion, and cilantro all tossed in a creamy vegan sour cream dressing, this is the best salad for a potluck, picnic or family BBQ that is incredibly addictive.

For The Salad

  • 3 medium cucumbers sliced
  • 2 medium avocado peeled, pitted and chopped
  • 1/2 medium red onion cut into thin slices
  • handful cilantro chopped

Vegan Sour Cream Dressing

  • 1 cup cashews soaked for 1 hour
  • 1/2 cup water
  • 3 tablespoons lemon juice
  • 1 teaspoon maple syrup
  • 1/2 teaspoon salt

Instructions

  • In a large bowl, combine cucumber, avocado, onion, and cilantro and toss together gently. Set aside.
  • Place soaked cashews, water, lemon juice, maple syrup, and salt in a blender. Process until sour cream is smooth and creamy, scraping down the sides.
  • Pour half of the sour cream dressing over the salad and gently stir to coat. Serve immediately or chill in a container with a tight-fitting lid for a couple of hours or up to 7 days.
