  • 2 cups hot water

Homemade Fajita Seasoning

  • 2 teaspoons chili powder
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground paprika

  • 2 tablespoons olive oil

Instructions

To Prepare Soy Curls

  • Preheat the oven to 400℉. Line a baking sheet with parchment paper, spray or brush with oil, and set aside.
  • Mix all the ingredients for the fajita seasoning mix.
  • To rehydrate the soy curls, soak them in a bowl with hot water for about 10 minutes.
  • Drain the water and add the fajita seasoning mix to your soy curls.
  • Place the seasoned soy curls on the prepared baking sheet in a single layer.
  • Bake for 20-25 minutes until golden brown, turning the soy curls over halfway.

To Prepare Fajita Vegetables

  • Heat oil in a large skillet over medium-high heat.
  • Add onions and bell pepper strips, and cook until vegetables are tender and caramelized while stirring frequently, about 5 minutes.
  • Add the baked soy curls in the skillet, stir, and add a squeeze of lime.
  • To serve, place soy curls and the sautéed veggies in tortillas, topped with guacamole, salsa, and sour cream.
