  • 1 fresh pineapple diced (about 21/2 cups)
  • 1 cup red bell pepper diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion diced
  • 1 medium jalapeno deseeded and diced
  • 1/4 cup cilantro chopped
  • 1 lime juiced
  • 1/2 teaspoon salt

Instructions

  • Make a pineapple bowl/boat. Wash the pineapple and using a sharp knife, cut off half of the pineapple lengthwise, making sure to leave the stem intact.
  • Cut around the edges of the pineapple with the knife slanting towards the center.
  • Make cuts along each side of the core lengthwise. Remove the core and save to add to smoothies.
  • Using a large serving spoon, scoop out the flesh and place in a bowl. Dice the flesh of the pineapple to whatever size you prefer.
  • Toss all your chopped ingredients in a bowl until fully combined.
  • Spoon salsa in the pineapple bowl and garnish with chopped cilantro.
  • To store, place leftover pineapple salsa in a container with a tight-fitted lid in the refrigerator for 2 days.
