Ingredients

  • 2 tablespoons avocado oil
  • 1 medium red onion chopped
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 2 green onions chopped
  • 1/2 teaspoon turmeric
  • 1 medium tomato chopped
  • 2 medium potatoes peeled and diced
  • 2 cups corn kernels fresh or frozen
  • 1 15 ounce can red kidney beans, rinsed and drained
  • 1 vegan bouillon cube
  • 1 cup water
  • 1/4 cup cilantro chopped
  • Salt to taste
  • 1/4 teaspoon Cayenne pepper optional

Instructions

  • Heat oil in a large saucepan over medium-high, Add onion and cook until soft, about 2 minutes.
  • Stir in garlic, ginger, green onions, and turmeric and cook until fragrant, about 1 minute.
  • Add tomatoes, potatoes, corn kernels, kidneys, vegan bouillon cube, water, and cook until potatoes are tender, about 10-15 minutes
  • Add salt to taste, and chopped cilantro. Serve.
