Gluten-Free Granola

Flavorful, crunchy gluten-free granola is so easy to prepare, granola is a family staple, it is vegan, gluten-free, sugar-free, oil-free, high in fiber and very nutritious. Cranberry orange granola made with fresh orange juice, plump dried cranberries, cardamom baked until crisp.

Ingredients

  • 2 cups rolled oats certified gluten-free
  • 1/4 cup walnuts chopped
  • 1/4 cup almonds chopped
  • 2 tablespoons ground flaxseeds
  • 1 teaspoon cardamom
  • 1/3 cup maple syrup
  • 1/4 cup orange juice
  • 2 tablespoons tahini
  • 1 teaspoon vanilla
  • 1 small orange zest
  • 1/2 cup cranberries or raisins

Instructions

  • Preheat oven at 300 degrees F. Prepare a baking sheet, line it with parchment paper and lightly grease or brush with oil and set aside.
  • Place oats, walnut, almond, flaxseed, cardamom in a large bowl and mix well. In another bowl, mix maple syrup, orange juice, tahini, vanilla, and orange zest.
  • Pour maple syrup mixture into oats mixture until completely coated. Spread granola unto the prepared baking sheet in an even layer.
  • Bake granola until golden brown and crisp, about 30-40 minutes, turning half halfway.
  • Remove baking sheet from oven and allow the granola to cool, add raisin or cranberries and stir.
