Preheat oven at 300 degrees F. Prepare a baking sheet, line it with parchment paper and lightly grease or brush with oil and set aside.
Place oats, walnut, almond, flaxseed, cardamom in a large bowl and mix well. In another bowl, mix maple syrup, orange juice, tahini, vanilla, and orange zest.
Pour maple syrup mixture into oats mixture until completely coated. Spread granola unto the prepared baking sheet in an even layer.
Bake granola until golden brown and crisp, about 30-40 minutes, turning half halfway.
Remove baking sheet from oven and allow the granola to cool, add raisin or cranberries and stir.
