Ingredients

  • 2 tablespoons avocado oil
  • 1 medium onion chopped
  • 5 cloves garlic chopped
  • 1 teaspoon ginger grated
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cardamom
  • 1 teaspoon salt
  • 5 medium tomatoes chopped
  • 1 pound collard greens washed, stems removed, finely chopped

Instructions

  • Heat oil in a large saucepan over medium heat. Add onion and cook until soft, about 3 minutes.
  • Stir in garlic, ginger, turmeric, paprika, cardamom, and salt. Cook until fragrant, about 1 minute. Add tomatoes and cook for another minute, stirring periodically.
  • Add collard greens and constantly stir until the greens have wilted. Cover the saucepan, reduce heat to simmer for about 10 minutes.
