  • 3 cups green beans cooked or canned
  • 2 cups tomatoes chopped
  • 1 small red onion diced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt

Instructions

  • If using fresh green beans, trim and rinse green beans. Chop green beans into 2-inch pieces.
  • Place in a saucepan over medium heat add water to cover and bring to a boil for about 5 minutes or until tender.
  • Drain green beans and rinse under cold water to stop the cooking process. Pat with a towel to dry.
  • Transfer green beans to a bowl, and add tomatoes, onion, garlic, olive oil, and salt. Toss to combine.
