  • 2 14-ounce can of pigeon peas drained, or 3 cups of fresh or frozen peas
  • 1 8-ounce vegan cream cheese
  • 2 cloves garlic
  • 2 teaspoons fresh lime juice
  • 1 teaspoon ground cumin
  • 1/4 teaspoon Cayenne pepper
  • 1/2 teaspoon salt or to taste

Additional Ingredients

  • 1 cup vegan shredded cheese
  • 1/2 cup cherry tomatoes halved
  • chopped cilantro leaves

Instructions

  • Preheat the oven to 375 degrees F. Lightly brush oil in a baking dish and set aside.
  • In the bowl of the food processor, add pigeon peas, vegan cream cheese, garlic, lime juice, cumin, pepper, and salt.
  • Process until the dip is smooth and creamy.
  • Scoop the dip into a prepared baking dish, and sprinkle the top with vegan cheese.
  • Bake for 15 minutes until the dip is heated through.
  • Garnish with cherry tomatoes, green onion, and chopped cilantro. Serve hot or cold.
