For The Salad

  • 2 1/2 cups heirloom tomatoes
  • 1 cup cherry tomatoes
  • 1 cup cucumbers sliced
  • 1/4 cup red onion thinly sliced

For The Salad Dressing

  • 2 1/2 tablespoons olive oil
  • 2 1/2 tablespoons lemon juice
  • 1 garlic clove minced
  • 1 teaspoon maple syrup
  • 1 teaspoon sea salt
  • 1 tablespoon fresh basil leaves finely chopped
  • 1 tablespoon fresh oregano finely chopped

For The Garnish

  • fresh basil leaves whole
  • 2 tablespoons Vegan Feta Cheese crumbled

Instructions

  • In a large salad bowl, add tomatoes, red onion, and cucumber.
  • Add all of dressing ingredients, olive oil, lemon juice, maple syrup, garlic, salt, basil, and oregano, in a separate bowl. Mix well until all the ingredients are combined.
  • Drizzle the dressing over the salad ingredients, and top the salad with basil leaves and feta cheese.
  • Serve immediately, or cover with cling wrap and refrigerate for up to 3 days.
