  • one pound dried pinto beans sorted and rinsed
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1/4 cup red bell pepper chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon Italian seasoning
  • 1 teaspoon ground paprika
  • 1/2 teaspoon Cayenne pepper
  • 2 vegetable bouillons
  • 4 cups water
  • 1/2 teaspoon liquid smoke (optional)
  • 1/2 teaspoon salt or to taste

Instructions

  • Turn Instant Pot on saute mode, heat oil, and add onion, garlic, bell pepper, and thyme. Cook until onion is soft.
  • Add pinto beans, Italian seasoning, paprika, cayenne pepper, vegetable bouillon, water, and liquid smoke, and press the off button. Place the lid on the Instant Pot, turn the knob to sealing.
  • Cook beans on manual high pressure for 50 minutes. Allow to natural release for about 20 minutes; add salt to taste, and serve.
