Select the sauté option of the instant pot.
Add olive oil. Once it is heated, add onion and cook for a minute or two until it turns translucent.
Add chopped garlic and cook for a minute.
Add thyme, salt and mix well.
Add rinsed quinoa and stir until the water evaporates.
When the quinoa begins to stick to the pot, select cancel to turn off the instant pot.
Add vegetable broth and seal the lid tightly.
Select high pressure and cook for 3 minutes.
Once the timer is up, quickly release the pressure.
Remove the lid, add soy sauce and chopped green onion and mix well.
