Ingredients

  • 1 cup quinoa rinsed ( I used red quinoa)
  • 2 tablespoons olive oil
  • 1 1/4 cup vegetable broth
  • 1 small onion diced
  • 3 cloves garlic chopped
  • 1 sprig thyme
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 1/4 cup green onion chopped

Instructions

  • Select the sauté option of the instant pot.
  • Add olive oil. Once it is heated, add onion and cook for a minute or two until it turns translucent.
  • Add chopped garlic and cook for a minute.
  • Add thyme, salt and mix well.
  • Add rinsed quinoa and stir until the water evaporates.
  • When the quinoa begins to stick to the pot, select cancel to turn off the instant pot.
  • Add vegetable broth and seal the lid tightly.
  • Select high pressure and cook for 3 minutes.
  • Once the timer is up, quickly release the pressure.
  • Remove the lid, add soy sauce and chopped green onion and mix well.
