  • 1 medium jicama
  • 1/2 cup raisins
  • 1 small can of pineapple tidbits
  • 1/2 cup vegan mayo homemade or store-bought
  • 1 tablespoon agave nectar or any other sweetener

Instructions

  • Rinse the jicama well. Peel the jicama, and then shred it using a box grater or food processor.
  • In a medium bowl, toss the grated jicama with mayo and sweetener and gently combine them.
  • Add the raisins and pineapple to a bowl. Stir the salad until the ingredients are fully combined.
  • You can immediately serve the jicama pineapple salad, or cover it and put it in the fridge to chill thoroughly. This delicious salad will stay fresh in the fridge for up to 6 hours.
